Wedding Catering:

We have a selection of menus for you to choose from which are aimed to suit all budgets.  These menus should only be regarded as a guide as Chef is happy to work with you and create a menu to suit

Option 1 - $55.00pp

Please select two from each of the following courses.

  Entree:

Roasted pumpkin soup with sour cream & chives

Chickpea and smokey bacon soup

Vietnamese salad with chicken and hoi sin, wrapped in rice paper

Rosemary grilled lamb on a Greek Salad

Caesar salad with crispy prosciutto and sour dough croutons

Smoked salmon and dill risotto

Penne pasta with sautéed bacon and mushroom in a white wine and cream reduction

Main Course: 

Char grilled scotch fillet on mashed potato with seasonal greens and a red wine jus

Chicken supreme with a bacon and thyme mousse on potato dauphinoise
with a tomato and basil sauce

Fillet of salmon on a preserved lemon risotto with steamed snow-peas and a Beurre blanc

Ossobuco on a creamy polenta with gremolada and crispy beans

Dessert:  

Lime and ginger creme Brulee with sesame wafers

Sticky date pudding with double cream and a butterscotch sauce

Individual pavlova with vanilla bean ice cream and Grand Marnier strawberries

Flourless chocolate cake with raspberry sorbet and double chocolate sauce

Option 2 - $65.00pp

 

  Entree:

Served up the centre of each table -

Hunter Resort fleshly baked bread with local Pukara Estate extra virgin olive oil

Seafood boards including:
Sugar cured salmon with a snow pea leaf salad and a sweet soy dressing
Grilled scallops with ginger caramel
Tuna sushi rolls
Chargrilled prawns on lemon grass skewers

Antipasto boards including:
Cured meats
Chargrilled eggplant and zucchini
Local fetta
Local olives

Poached beef fillet on potato fondant with thyme hollandaise

Crispy skinned duck confit on creamy mash and seasoned greens in a rich marmalade jus

Smoked lamb rack with crispy roast potatoes and a honey, mint jus

Steamed whole snapper wrapped in banana leaf with a sweet ginger and chilli sauce

Dessert:

Chocolate and raspberry semifreddo with a raspberry, Frangelico sauce 
in addition to glass biscuits

Black sticky rice with baked Thai coconut custard and a mango salsa

Pears poached in five-spice syrup with brandy snap and ginger cream

NB: Hors d’oeurves may be substituted for the entrée from the previous menus

Beverages:

We like to make the drink arrangements as simple as possible for you.  You have the three options:

1.     Guests pay they go

2.     A set bar tab – the limit on the tab and the selection of beverages available must pre-set prior to the wedding and a contact person given in order to ensure the limit is not over-spent. The costing of drinks below will help you set a tab if you choose this option:

4 varieties of beer which may change seasonally

Middies:    $3.00 per beverage
Schooner: $4.50 per beverage
Pint:         $6.00 per beverage
Regular Spirits $5.00
Premium Spirits $6.00
Wines: Choose from our House range of San Martino and Hele-Barry wines or from our current or vintage wine lists. Simply let us know if you would like us to email/fax you an up-to-date list.
 

3. Drinks package – there are two packages to choose from featuring a selection of our own label wines.

Each package is arranged on a 4-hour time limit.

Included in BOTH packages is the House Sparkling Wine
